Chef Levy: Episode 2
In episode 2 of Chef Levy, the group of chefs decided to prepare a “smash” burger. Chef Miller suggested the “smash” burger after his trip to Nashville, TN, where he was inspired by how delicious he found the burger.
The Chefs knew this dish was a step up from their last; however, they decided to take a chance.
“The only way to get better was to challenge ourselves and make the possibilities endless,¨ Chef Levy said.
Ingredients:
80/20 Ground beef.
Thinly sliced pickles.
Brioche Bun.
Sauce/ Diced pickles, Honey, Mayo, Dijon Mustard, ketchup, Smoked Paprika, Onion Powder, Garlic Powder, Salt, Pepper, and Lemon juice.
Cheese Blend: American, Sharp Cheddar.
Directions:
1.Ball up the 80/20 beef into mandarin sized balls and toss between hands to get rid of air bubbles
2.After all air bubbles have popped, sort the beef on a sheet and place in the refrigerator for 15 minutes
3.While the meat is in the fridge we will prep the other ingredients. Thinly slice some pickles and set them aside
4.With the rest of the pickle you want to dice them into very small cubes
5.Place the diced pickles in a bowl and add the mayo, honey Dijon mustard, squirt of lemon, smoked paprika, onion powder, garlic powder, salt, and fresh cracked pepper
6.Set the sauce aside and pull your beef out of the fridge.
7.Set your pan on a high heat and butter the pan to toast your buns on a low heat
8.Get your cheeses and salt and pepper ready.
9.Place your beef patties on the blacktop on a high heat and smash the patties until very thin
10.While the patties are cooking, sprinkle on some salt and pepper
11.After a couple seconds flip the patties and add your cheeses.
12.Once the cheese is melted go ahead and stack the patties.
13.Take the patties off the stove and place on your bun, now add your pickles and smash burger sauce.
14. Now enjoy your burger and have napkins ready
